Today we’re going to Spain with this easy gazpacho recipe!

During the years I spent in Valencia, I couldn’t stop eating gazpacho. The heat, even during wintertime, was one of the reasons, but also because it’s so easy to find places where to eat it and even the one sold in markets is actually very good. As a result, I had at least a cup of it almost every day!

I’ve prepared the Spanish gazpacho soup many times, following different recipes and modifying them to find the perfect taste. So, this is my recipe:

Ingredients to prepare Spanish gazpacho recipe

  • 1 liter of tomato juice
  • 1 lemon
  • 1 clove of garlic
  • 1 cucumber
  • 2 tomatoes
  • 1 red pepper
  • 1 red onion
  • 1 teaspoon of brown sugar
  • 1 salted anchovy
  • basil, olive oil, chili pepper, pepper, salt

How to prepare the gazpacho soup

Mix the tomato and the lemon juice, add a little olive oil, the chopped garlic, a few fresh basil leaves (according to your taste), the sugar the previously minced anchovy fillet.
Put it all in the mixer for a few minutes and then let it cool in the fridge for about half an hour.
In the meantime, cut into dices the tomatoes, the cucumber, the onion, and the red pepper that will be served separately so that everyone can pick. One last tip: let your friends decide also regarding salt, pepper, and/or chili!
