Today my mouth leads me to Paris, namely to the Bar à Soupe in rue de Charonne, just below the first flat I lived in during the master … well, my mouth takes me back in time …

This cream is not just like the original recipe – hoping that Anne-Catherine, owner of the restaurant, will forgive me – but the result, in my opinion, a very good one, after several attempts.

A very cool French recipe: peas cream with mint

The peas cream with mint recipe

600 grams of peas (frozen it’s ok, but if you prepare the spring with fresh ones is even better)
2 onions
8 lettuce leaves
1 liter of water
15 cl whipping cream
2 sprigs mint
salt
pepper

How to prepare it

Clean the vegetables and chop onion and salad.
Put the vegetables in a pot and boil for 25 minutes.
Turn the flame off, add the cream and mint and blend everything in the mixer.
Add salt and pepper to your taste.

Today I am eating it cold, so I left it in the fridge for about an hour, but hot is delicious too!
